My husband enjoy this Stuffed Bell Peppers with of course peppers that are stuffed with ground make-believe-beef (soy beef) with a mixture of olive oil, mashed chick peas, onions, tomato sauce, garlic, basil, and spices.
Preheat oven to 350 degrees F.
Use the canned chickpeas, mash them in a bowl.
In a skillet over medium heat, saute the onions (diced), garlic (diced), and soy ground beef with olive oil cook until evenly browned. Remove and discard the tops, seeds, and membranes of the bell peppers. Arrange peppers in a baking dish with the hollowed sides facing upward. (Slice the bottoms of the peppers if necessary so that they will stand upright.) In a bowl, mix the browned beef, mashed chickpeas, 1 can tomato sauce, basil, salt, and pepper. Spoon an equal amount of the mixture into each hollowed pepper. Bake 30 minutes in the preheated oven, basting with sauce every 10 minutes, until the peppers are tender.
